The Cortese is one of the few white grapes that is well suited to all types of soil and climatic conditions of Monferrato. It produces a pleasant wine to be consumed at any time of the day due to its freshness and lightness.
Harvested by hand to the first decade of September, the grapes are subjected to a soft pressing and it´s fermented at a controlled temperature without the skin. The permanence of the wine on the yeast is about 30 days. It is gained in stainless steel tanks for a few months. Follows the stabilization, micro-filtration and bottling. Straw yellow color with greenish reflections, it has a fruity with sweet notes reminiscent of acacia flowers and citrus fruits.
The taste is dry, perfectly bitter and inviting. It is excellent with fish dishes, risottos and even pizza.
