Piemonte D.O.C. Bonarda

 

It is an old vine traditionally Piedmont not to be confused with its namesake wine made ​​from grapes at Pavese Croatina (much more lovable and bubbly);produces a bunch medium to large, pyramidal with wings well developed and has a beautiful characteristic blue-black berry aroma.
Grown on mixed soils ¨patchy type¨ with a breeding system in espalier with guyot pruning, operation manual of the foliage and grass that covers the ground. The planting density is 5000-6000 plants / ha and the yield is about 1.5-2 kg.di grapes per vine. The harvest is made at fully ripe bunches (lignification of the stalk), usually the end of September.
Vinification takes place at a controlled temperature and involves the crushing-stemming of the grapes then follows the maceration with the skins for a short period (5-7 days.) in order to preserve the fruity characteristics of the grape. Follows the end of alcoholic fermentation and a racking short ¨malolactic¨ process in stainless steel tanks. Follows the tartaric stabilization, microfiltration and bottling. The wine produced has a beautiful ruby red color, intense aroma with hints of fruit. The flavor is sweet and slightly tannic, with a good acidity is also suitable for a limited aging.
