The wine Grignolino is well suited to the limestone soils and ¨tuff¨ which is common in Piedmont and in particular the Monferrato.
It is called by many a wine ¨against nature¨ because it is difficult to produce, to make wine and not yet experiencing the full consensus of the market (it is a wine not approved to consumer trends, but "anarchist" as Veronelli says), it isn't appreciated by the beginners instead by connoisseurs.
Someone might wonder why I insist, the answer comes only from the fact that the Grignolino is the most typical expression of our. Monferrato in terms of quality. Among the hypotheses on the origin of the name of the variety the most reliable are those that Grignolino derives from ¨grignole¨, the seeds of grapes in piedmont´s dialect. It is usually grown on land more ¨lean¨ (tuff, limestone) because of his roots that expand into vertical well suited to such conditions.
System of cultivation is espalier with guyot pruning traditional (with spur pruning, total 6 gems) with a planting density of 5000-6000 vines / ha and yield of 1-1.5 kg. of grapes per vine, fruit thinning post veraison which aims to target aging only the best grapes and ripe. Manual run of the foliage with grass cover the ground. The manual harvest is made at fully ripe grapes (bunches of lignification) usually in mid-late September.
The uniqueness of this our. ¨Ambassador¨ is given by the fact that the skins of the grapes of Grignolino are very rich in aromatic substances (terpenes, in this case the geraniol) which increase considerably in particular climatic conditions such as high temperature ranges typical of our zones in periods of late summer (August-September, a period at the end of ripening), just give these unmistakable aromas and almost unique, making the Grignolino a red wine suitable for most types of matching.
The fermentation takes place in controlled temperature pressing of the grapes then left to ferment and macerate with the skins and seeds for a short period (3-5 days), thus avoiding alcohol format to ¨check out¨ from the numerous seeds present the characteristic astringent, too invasive to taste.
Follows stabilization, micro-filtration and bottling.
It´s a wine that has to be drunk young to fully appreciate its qualities, although recently has been very successful aging in large oak barrels for a few months. It has a characteristic light ruby red color, a scent and fruity with hints of spices (pepper) and flowers (geranium). The flavor is typical, especially appreciated by the most delicate palates because dry, tannic and bitter. It goes well with appetizers, white and red meats. Also suitable for fish dishes.
